In this seminar, University of Illinois Urbana-Champaign's Cecilia Leal will present findings that suggest lipid droplets undergo structural remodeling, close-packing rigid and highly saturated triacylglycerols in response to caloric overload, allowing for optimal expansion of fat during the initial stages of obesity.
